Spaghetti and Meatballs With My Grandson....

My Grandson Alaka’I (his name means the one who leads the way in Hawaiian) had a fabulous time together this afternoon making some really good meatballs.  His all time favorite dish is spaghetti so I thought I would teach him to make it with meatballs from scratch.  Here is the recipe that we used to make them:

2 pounds lean ground beef    
1 Pound ground turkey 
Splash of whole milk
1 grated yellow onion
1/2 cup freshly grated Parmesan cheese
2 teaspoon minced garlic
1 teaspoon Fresh basil
1 teaspoon dried oregano
2 tablespoons chopped fresh flat-leaf parsley
1 cup fresh white bread crumbs
1/2 teaspoon ground black pepper
4 teaspoons yellow mustard
2 tablespoon ketchup
2 teaspoon Kosher salt
1 teaspoon pepper

Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, eggs and 3/4 cup warm milk in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 3-inch meatballs. You will have 14 to 24 meatballs.  We added a little chunk of smoked mozzarella cheese inside of each meat ball.

Pour a small amount of olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.

For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine (make it a good wine that you would drink) I used a good Chianti and I just poured it around the pan a couple of times. Cook on Medium-high heat, scraping up all the brown bits of goodness in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes (1 large can of diced tomatoes), one jar of good marinara sauce, parsley, salt, and pepper. Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. I chopped up some fresh basil into the sauce right before serving. Serve hot on cooked spaghetti and pass the grated Parmesan. We also served a fresh garden salad with lettuce tomatoes and cucumbers and a piping hot loaf of garlic bread with melted mozzarella cheese on top. 

The look of delight on my Grandson’s face made this time in the kitchen with him a delight. You don’t have to go out somewhere expensive to bond with your Grandchildren.  I treasured this time we had in the kitchen to cook together and share what is going on in both of our lives.   He was good company for me today and I am sure he will remember this day for a long time. All I could say was this was Simply Heavenly spaghetti and meatballs!!!


I tried this and came out perfectly,specially my husband liked the dish very much.

It is amazing how kids really take to spaghetti and meatballs. My kids love it and even just the meatballs served to them on a toothpick. The picture looks yum and I am sure your grandson enjoys it.

We had so much fun and cooking is one of those things where you can share each others thoughts while doing something as simple as rolling a meatball. I found out he has a crush on a few girls at this school and that he loves football cards. Next time we are going to make ravioli that is his all time favorite!!! Have a Simply Heavenly day!!! :):)
