Seafoam and Salmon


 This is a picture that my nephew Tyson took in Kauai.  I thought it was so beautiful that I wanted to share it with you. Since he lives in Wainiha, which is one the north shore of Kauai, I am guessing that this is Hanalei Bay.  He is a pretty talented photographer.  Mahalo Tyson!

Today is such a beautiful Saturday morning.  I don't see one cloud in the sky.  This is a day the Lord has made let us rejoice and be glad in it!  I love Saturdays because I walk on the beach and then when it gets really hot you just run into the surf  and dive under the waves.  There is nothing that feels more refreshing!

With tomorrow being Father's Day I am remembering my Daddy who went to be with Jesus.  I praise the Lord because my love has not dimmed for my earthly father and the Holy Spirit touched my heart this morning and told me, "Just imagine how much more you heavenly Father loves you"  With a perfect love an everlasting love.  Thank you my heavenly Father for your most perfect everlasting love!  We need to know that our heavenly Father can and will make up for all the shortcoming that our earthly fathers possessed.  He will always be with us, will always care for us and never ever leave us. I want to start to look at others with my Father in heavens eyes.

 If you have a great dad let him know how much you love him, and never take him for granted. Let  us also remember those great dads who have gone on to heaven. For the ones who feel as if their dad may have missed the mark, you are not fatherless, our father God is showering you daily with His love.

I think that tonight I am going to make salmon.  One of my favorite recipes for salmon is with spinach, pine nuts and goat cheese.  I like the texture of it with the spinach, cheese and pine nuts.  I start with 4 nice size salmon fillets.  I always try to get wild fish when ever I cook fish.  Not only does it taste better, but I think it is better for you.

Preheat your oven to 350 degrees. While the oven is heating up take a box of chopped spinach that has thawed out and ring all of the moisture you can out of it.  Then I just run my knife through it to make sure it is all chopped.  Then I chop one clove of garlic and one large shallot.  Put some extra virgin olive oil in a large skillet and let it heat up add the garlic and just let it saute for a few seconds before you add the shallots.  You never want to overcook garlic because it will be bitter. Then add your spinach to the pan and toss it with the shallots and garlic.  Then I take 6 sun dried tomatoes and chop them up and add them to the mix. add kosher salt and pepper to taste and then I add one teaspoon of red pepper flakes just to jazz up the flavor.  While that is cooking I add 1/4 cup of pine nuts in a dry skillet to let them toast.  I like to toast the pine nuts to let the oils escape.  Toast the nuts until they are just browned.  You have to watch them closely because pine nuts burn fast.  It adds so much more flavor to your dish you won't believe it.  Then you add 1/2 cup of goat cheese to the spinach mixture toss it through and pull it off of the heat. While it is cooling I take my knife and make slice marks on top of the salmon fillets.  You don't want to cut very deep just enough to pack your spinach mixture on the top.  Then you use your hands and pack the cooled spinach mixture on top of each fillet pushing it into the salmon.  Then you place your fillets in a glass baking dish and let them bake for about 15-20 minutes or until the salmon is cooked.  While the salmon is baking I make a salad out of  red peppers, tomatoes and sweet onions.  I tossed it with a homemade vinaigrette that I make with the juice of one lemon, 1 table spoon of good Dijon mustard and kosher salt, cracked pepper and extra virgin olive oil and 1 squeeze of honey.  This dinner is so tasty and good for you.  If you like to have a glass of wine with dinner I would choose a nice Chardonnay.  I think that if you try this you will be glad that you did.
